Blender Roasted Red Pepper Soup

The only way to make soup tomato soup better is to add roasted red peppers. This roasted red pepper soup is a slight twist on my blender tomato soup & it goes just as well with a grilled cheese, if not better!

Blender Roasted Red Pepper Soup

Servings: 4

Ingredients

  • (1) 14oz can peeled tomatoes

  • 1c jarred roasted red peppers

  • 1T minced garlic (jarred is fine)

  • 1/4tsp paprika

  • 1/2tsp onion powder

  • 1/2tsp dried basil

  • 1tsp honey

  • 2c vegetable broth

  • 1c cottage cheese

  • 1T extra virgin olive oil

Directions

  1. Add all ingredients to a blender and blend starting on low and gradually increasing speed to ensure the blender does not overflow.

  2. Blend until completely smooth, about 30-60 seconds.

  3. Pour into a large sauce pan and heat over medium high heat until boiling, then reduce to a simmer. Heat until hot about 5-10 minutes, stirring occasionally.

  4. Pour into 4 separate bowls and enjoy now, or store in air tight containers and enjoy later!
