Taco Mac n’ Cheese

Boxed Mac n’ Cheese meets Tacos might just be your new favorite weeknight meal. I like using Goodles brand mac n cheese for more fiber and protein, and you can for sure use lean ground beef for the tacos, but turkey is a nice lighter swap and a bit cheaper.

This meal comes together in about 30 minutes and the whole family will love it for sure!

Taco Mac n’ Cheese

Servings: 4

Ingredients

  • boxed mac n’ cheese

  • milk and butter (for the mac n’ cheese)

  • 1lb lean ground turkey

  • 1 can diced tomatoes

  • taco seasoning packet

  • 1/2c freshly grated cheddar cheese

Directions

  1. Preaheat the oven to 350 degrees farenheit.

  2. Cook the mac n’ cheese according to box instructions.

  3. Heat a large cast-iron skillet over medium heat and add the turkey. Saute until completely browned.

  4. Add the can of diced tomatoes and stir to combine.

  5. Add the taco seasoning and the amount of water advised on the back of the seasoning packet.

  6. Stir to combine and cook until the water has evaporated and the seasoning has thickened and coated all of the meat and tomatoes.

  7. Remove from the heat and add in your finished mac n’ cheese. Stir to combine.

  8. Top with the shredded cheddar cheese and place in the preheated oven until the cheese has melted, about 10-15 minutes.

  9. Enjoy now, or place in an airtight container and store in the fridge for meal prep.
