Blender Protein Pumpkin Waffles
Yes pumpkin spice is in everything, but one of the best things? A protein waffle! I spend a lot of time re-creating this protein waffle recipe so it can grow with the seasons and the pumpkin spice might just be my favorite :)
Wanna cook now and eat later? Not a problem! These waffles make AMAZING meal prepped breakfast. Just cook, cool on a cookie sheet, place in a freezer ziploc bag, freeze, and pop in the toaster when ready to eat!
Pumpkin Spice Protein Waffle
Servings: 1
Ingredients
½ banana
1T pumpkin puree
1 egg
1T almond milk
1 serving collagen powder
1/2c rolled oats
1/4tsp pumpkin pie spice
1/2tsp baking powder
Directions
Turn your waffle iron on and allow it to pre-heat.
Add all ingredients above to a blender.
Blend on high until smooth, about 20-30 seconds.
Using non-stick cooking spray or melted butter, grease your preheated waffle iron.
Pour the batter into the waffle iron, close, and allow to cook until slightly browned and sturdy.
Remove from the waffle iron, top with butter, and warm maple syrup.
